Pulled pork with barbecue sauce is the main ingredient in these mac and cheese wrap sandwiches. This recipe is a convenient option for a one-dish meal using two prepared ingredients. Select a prepared pulled pork product and wrap it with mac and cheese in a flour tortilla. The crunchy edges and pulled pork filling appeal to me.

I cook the pork and macaroni before making burritos. I place shredded cheese on the bottom of each tortilla, followed by macaroni and pork. Placing macaroni and cheese on top of the shredded cheese helps keep looser ingredients in place. All the ingredients are warm. I use large burrito-size tortillas, 10 inches or more in diameter, to avoid breaking when folding and rolling the sides of the tortilla over other ingredients to make burritos.
I tightly roll tortillas lengthwise with the ends tucked inside to form a roll. I cook tortillas seam side down in a pan with melted butter over medium heat for 2-3 minutes per side until browned. I use a spatula to press tortillas as they cook and remove them when they are browned on both sides and warm in the middle.
I keep some tortilla intact around the edges of the wrap to help it hold together without overstretching the tortilla, even when you add tasty ingredients, because wraps tend to overflow. Provide a large skillet or griddle to allow turning of the wraps and slice wrapped items in half only after they come off the heat. Serve immediately for a crunchy texture.
Why this recipe works
- Pulled pork barbecued flavors are included in both the macaroni and the tortilla dishes.
- A large spoonful of macaroni and cheese will not spill out of a wrap when it is fried.
- The cheddar and Monterey Jack cheese blend melts between the warm filling and the tortilla.
- Four tortillas can make four wraps with two cups each of pork and macaroni.
- Homemade leftover pork and store-bought leftover pork can be used to save time when planning meals.
- Butter browns the crust in the pan as the filling heats and the cheese melts.
Ingredients
- •2 cups prepared pulled pork (warmed, with BBQ sauce)
- •2 cups prepared macaroni and cheese (warmed and preferably thick)
- •1 cup shredded cheese blend (cheddar and Monterey Jack work well)
- •4 large flour tortillas (10-inch or burrito-size)
- •2 tbsp unsalted butter (melted, for grilling)
Instructions
- 1
Warm the pulled pork and macaroni and cheese.
- 2
Lay one tortilla flat. Sprinkle a small amount of shredded cheese in the center, then add about 1/2 cup macaroni and cheese and 1/2 cup pulled pork.
- 3
Fold the left and right sides over the filling, then tightly roll the tortilla from the bottom into a secure wrap.
- 4
Heat a large skillet over medium heat. Brush one side of the wrap with melted butter and place it seam-side down in the pan.
- 5
Cook for 2-3 minutes until golden brown and crispy. Brush the top with butter, flip, and cook for another 2-3 minutes until the second side is golden and the filling is hot and melted.
- 6
Remove from the skillet, slice in half if desired, and serve immediately.
