Prepare this eight-serving pork tenderloin dish with little work by cooking and portioning the pork with soy, honey, and garlic sauce in advance. Slicing, sauce drizzle, and parsley garnish tasks can be done just before serving. The low, slow cooking makes the pork tender enough to eat with a fork.
The sauce contains chicken broth, soy sauce, honey or brown sugar, garlic, onion powder, and balsamic vinegar, if using. The sauce surrounds the chicken tenderloin while it cooks in a slow cooker. Other ingredients added to chicken tenderloin include thyme or rosemary, salt, and pepper. You can pan-fry the chicken tenderloin before slow cooking, if desired. To thicken the sauce in the slow cooker, mix cornstarch with water. Advantages of the sauce include sweet, salty, and tangy flavors in each serving.
After 6-8 hours on low or 3-4 hours on high heat, pork pieces will be fork-tender, which means they will fall apart easily. Loosely tent the cooked pork with foil while it rests before slicing. Pork juices will thicken if the pork is cooked on high heat for 10-15 minutes after the starch slurry is added. Common mistakes include removing pork from the slow cooker too early. Look for fork tenderness as well as other signs of doneness.
Serve cut pork with mashed potatoes, roasted vegetables, steamed vegetables, salads, bread, grits with cream sauce, collard greens recipes, and other dishes. Set aside some sauce to serve with individual servings of cut pork to use in other recipes, including sliders, tacos, wraps, bowls, scrambled eggs, breakfast hash, soups, and stews. You can use cut pork in many recipes.
Why this recipe works
- Serves eight people with a 1½- to 2-pound tenderloin. Use one slow cooker recipe to make a meal and have leftovers for additional meals.
- The pork can be sliced or pulled apart after cooking. Sliced or pulled pork works well in sandwiches, tacos, other rolled items, rice dishes, and breakfast dishes.
- Cooked meat can be frozen safely if it is properly packaged. Leftover soy and honey sauce can be saved for other uses instead of being thrown away.
- Slow reheating will help keep the pork tender. Basting sliced pork with saved cooking juices or thickened sauce will also help keep it tender.
- An overnight marinating step can help save time during the day for other meal preparation and provide time for either a slow-cooked or fast-cooked evening meal.
- Optional cornstarch thickening can be done after resting to make leftovers less watery. Preparing food ahead of time with cornstarch thickening can help prevent sauces from being watery.
