I prepare four portions at once whenever I want dinner plated and also ready on the table, with each cod fillet placed in its own shallow bowl that has room for the curry (I prefer the yellow sauce in a shallow bowl). The yellow coconut curry evenly coats the fish, and I systematically spoon on the watercress along with the infused oil just before serving.

I make use of a wide, shallow skillet with a tightly fitting lid, since the fillets require sufficient room to sit without overlapping in the sauce, while center-cut pieces of beef at least 1.5 inches thick successfully hold together during the poach. Thin tail pieces heat up too quickly. They can break apart before reaching for the bowl.
The curry paste together with the turmeric cook in the coconut oil for approximately 2 minutes. This initial step takes place before the coconut milk is added, as this short start improves the paste's color alongside smell (I like observing it turn a deeper yellow in the pan). I carefully heat the sauce only until it reaches a trembling simmer. After that, the heat is lowered after the cod is covered. The fish remains tender but opaque in its texture.
For serving, ladle the sauce around the fish instead of heaping it on top. Next, I lay the greens over the center, while jasmine rice or warm naan collects on the extra curry. If a larger spread is being put out, crispy Thai chicken bites or garlic butter shrimp rice bake fit well alongside the bowls on top of the table.
Why this recipe works
- Four separate fillets in their arrangement enable diners to easily portion their dinner into individual shallow bowls without cutting the fish at the table.
- The meal actually requires a total of 25 minutes. The curry base that includes fish cooks in the same wide skillet that is on the stove.
- A covered poach keeps the cod intact while the sauce surrounds the fillets for tidy presentation.
- The cook carefully adds the garnish only after the completion of the cooking process. In this way, each portion can finish in one bowl at one time.
- Jasmine rice or warm naan on the sauce elevates it to a complete meal without needing further cooking methods.
Ingredients
- •24 oz cod fillets (cut into four 6 oz (170g) portions, at least 1.5 inches thick)
- •13 ½ oz full-fat coconut milk (1 standard 400ml can)
- •3 tbsp yellow curry paste (45g)
- •1 tsp ground turmeric (3g)
- •1 tbsp fish sauce (15ml)
- •1 tbsp light brown sugar (15g)
- •1 tbsp virgin coconut oil (15ml)
- •salt (to season the cod lightly)
- •1 cup fresh watercress (30g, sprigs and leaves for garnish)
- •2 tbsp infused chili oil (30ml, for drizzling)
Instructions
- 1
Let the cod sit at room temperature for 15 minutes before cooking.
- 2
Melt 1 tbsp (15ml) coconut oil in a wide, shallow skillet over medium heat.
- 3
Add 3 tbsp (45g) yellow curry paste and 1 tsp (3g) ground turmeric, then stir continuously for about 2 minutes until fragrant and slightly deeper in color.
- 4
Slowly pour in 13.5 oz (400ml) full-fat coconut milk, whisking gently to combine it with the curry paste.
- 5
Stir in 1 tbsp (15ml) fish sauce and 1 tbsp (15g) light brown sugar, then bring the sauce to a very gentle simmer.
- 6
Season the 6 oz (170g) cod fillets lightly with salt.
- 7
Lower the cod into the center of the skillet so each fillet is submerged halfway in the curry sauce.
- 8
Cover the skillet tightly and reduce the heat to medium-low.
- 9
Poach for 7 to 9 minutes, until the fish is tender, opaque white, and slightly glazed. Do not let the sauce come to a rolling boil.
- 10
Use a silicone fish spatula to move each fillet to a shallow white ceramic bowl. Ladle sauce around the fish, top with watercress, and spoon tiny droplets of infused chili oil over the sauce.
