Cremini mushrooms, sometimes called baby bellas, are recommended for this soup recipe because they hold their shape and provide strong flavor in a creamy soup. Sauteing the mushrooms before adding them to the soup adds texture and flavor contrast to the shredded chicken and parsley topping (I particularly enjoy browned mushrooms).

I sauté mushrooms in a big Dutch oven with foaming butter and olive oil, then add a single layer of mushrooms. I cook the mushrooms for 3-4 minutes, flip them, and cook them more to brown. I leave browned pieces in the Dutch oven to add flavor to the cooking liquid. Two batches should be cooked in a smaller Dutch oven.
After sautéing the onion, I allow the flour to cook in the pan for 90 to 120 seconds before adding stock. I pour the stock into the pan slowly while stirring to incorporate it. I simmer the chicken covered. I find it easier to shred cooked breast meat if it is not simmered at a full boil. I want small pieces of shredded chicken in a thicker stock.
Cream is stirred in with the chicken and mushrooms when they are put back into the pot. Heat the soup gently, not to a boil, for 5 minutes to blend flavors. I recommend serving the soup hot and garnished with parsley. Provide freshly ground pepper and toasted sourdough bread for dipping. The soup can also be served as a starter course before Million Dollar Italian Lasagna.
Why this recipe works
- Cremini mushrooms are hearty enough to cook in broth and enhance the flavor of heavy cream.
- Butter and oil provide fat for the mushrooms to cook in, allowing them to brown deeply without the butter burning.
- A pound of chicken breast will provide six servings of shredded chicken.
- The flour cooks with the onion. The broth thickens and doesn't taste of raw flour.
- Heavy cream is stirred in at the end to keep the soup smooth and the chicken easy to shred.
- Fresh parsley and ground black pepper are used to season the cream broth.
Ingredients
- •2 tbsp unsalted butter (28g)
- •1 tbsp olive oil (15ml)
- •8 oz cremini mushrooms (225g, sliced)
- •1 yellow onion (medium, finely chopped)
- •3 cloves garlic (minced)
- •¼ cup all-purpose flour (30g)
- •4 cups low-sodium chicken broth (960ml)
- •1 cup heavy cream (240ml)
- •1 lb boneless, skinless chicken breasts (450g, about 2 medium breasts)
- •2 tbsp fresh flat-leaf parsley (finely chopped, for garnish)
- •coarse cracked black pepper (to taste)
- •sea salt (to taste, plus 1 teaspoon for simmering the chicken)
Instructions
- 1
Melt the butter and olive oil in a large Dutch oven over medium-high heat until the butter foams gently.
- 2
Add the sliced mushrooms in a single layer and leave them undisturbed for 3-4 minutes.
- 3
Continue cooking the mushrooms for another 3-4 minutes, until golden all over, then remove them with a slotted spoon.
- 4
Reduce the heat to medium. Cook the onion in the remaining fat for 5-6 minutes, until softened and translucent.
- 5
Add the garlic and cook for 1 minute, until fragrant.
- 6
Sprinkle in the flour and stir constantly for about 90 seconds.
- 7
Slowly pour in the chicken broth while whisking constantly, then bring the mixture to a gentle simmer.
- 8
Add the whole chicken breasts and 1 teaspoon of salt. Reduce the heat to low, cover, and simmer gently for 15-20 minutes, until the chicken is cooked through.
- 9
Remove the chicken breasts to a cutting board and shred them into bite-sized pieces with two forks while the soup simmers on low.
- 10
Return the mushrooms and shredded chicken to the pot.
- 11
Slowly stir in the heavy cream and heat the soup through over low heat for 5 more minutes without boiling.
- 12
Season with more salt and coarse cracked black pepper to taste. Serve immediately with fresh parsley.
