This chicken piccata yields four servings: I thin the cutlets and measure the pan sauce first, then cook it right before serving, while the chicken still has a crisp coating with the glossy lemon-butter sauce. Capers add a salty brine to the lemon dish, contributing considerably to the overall flavor (they do a lot here).

I make use of a heavy stainless steel skillet for this task, though cast iron also works effectively, while I precisely pat the chicken dry before it comes into contact with the flour, leaving ample room around each cutlet in the pan for proper cooking process. If the skillet happens to be crowded, then the coating will steam together with it and will continue to remain pale. The butter should be foaming in the pan, while the oil must be shimmering within it. This must occur before the chicken is added to the dish.
The browned bits that are left after searing play an important role in helping to start the sauce, and I gently scrape them up with the wine, then allow the lemon along with capers to reduce the liquid by half, after which I lower the heat before adding cold butter to the entire mixture. Remove the pan from high heat for that final step, and then carefully whisk in the butter with one tablespoon at a time.
Serve these delightful cutlets along with traditional pasta immediately. Alternatively, place them beside deviled egg macaroni salad for a creamy accompaniment. Asian cabbage salad acts as a lighter pairing with many delicious meals. For a larger dinner, grilled shrimp skewers work well alongside the chicken, and I like lemon wheels over with chopped parsley on the top.
Why this recipe works
- It offers a total of four distinct dinner portions. You can divide the chicken with respect to not scaling the pan sauce or guessing the amount to buy for dinner.
- Thin cutlets require cooking for a duration of just 3 to 4 minutes on each side. This approach ensures that one adequately prepares for success.
- Batch searing generates extra space around every cutlet, while a packed skillet results in pale flour instead of a well-browned crust.
- The cutlets then return to the skillet after a total of 60 seconds. Sauce is then collected before reaching the plate.
- Cold butter is stirred in slowly and gently over low heat during the preparation of the sauce.
Ingredients
- •1 ½ lbs boneless skinless chicken breasts (680g)
- •½ cup all-purpose flour (60g, for dredging)
- •4 tbsp unsalted butter (60g, divided and cold for the sauce)
- •⅓ cup dry white wine (80ml, such as Pinot Grigio)
- •¼ cup fresh lemon juice (60ml)
- •3 tbsp brined capers (45g, drained)
- •2 tbsp extra virgin olive oil (30ml)
- •¼ cup fresh flat-leaf parsley (15g, finely chopped)
- •kosher salt (to taste)
- •freshly cracked black pepper (to taste)
- •lemon wheels (for garnish)
Instructions
- 1
Slice the chicken breasts horizontally. Place them between two sheets of plastic wrap and pound them to 1/4 inch, or 6mm, thick. Season both sides with kosher salt and black pepper.
- 2
Put the flour in a shallow dish. Lightly coat each cutlet, then shake off the excess until the flour layer looks translucent.
- 3
Heat the olive oil and 1 tablespoon, or 15g, of butter in a heavy-bottomed skillet over medium-high heat. When the butter foams and the oil shimmers, cook the chicken in a single layer for 3 to 4 minutes per side. Work in batches if needed, then move the cooked chicken to a plate and tent it loosely with foil.
- 4
Lower the heat to medium and pour the white wine into the skillet. Scrape up the browned bits with a wooden spoon, then add the lemon juice, lemon wheels, and capers. Simmer until the liquid reduces by half.
- 5
Turn the heat to low. Whisk in the remaining cold butter, one tablespoon at a time, until the sauce is glossy and light yellow.
- 6
Return the chicken to the skillet for 60 seconds to coat it in the sauce. Garnish with the chopped parsley.
