Use 28 ounces of canned crushed San Marzano tomatoes for the Italian gravy. The cooked gravy will have a reddish color. I like to fry Italian-style sausage by cutting up whole sausage links into big chunks and adding a Parmesan cheese rind to the cooked tomatoes for extra flavor.

I prepare sausage in a large cast iron Dutch oven with a wooden spoon, making sure no more than a single layer of sausage is added at a time. Before adding any liquids, I cook the sausage for 4-5 minutes, turning it only once, to brown it well. Turn the sausage and cook for another 3 minutes. Adding too much sausage to the Dutch oven at once will leave the sausage less browned and reduce the amount of browned bits in the pot to clean out.
When the tomato paste is a brick color, add wine and scrape the bottom of the Dutch oven. Let the wine cook until it is half reduced and then add tomatoes. I keep the wooden spoon in the pot to prevent the tomato skins from burning onto the enamel surface of the Dutch oven. I stir the tomato skins every 30 minutes to prevent burning.
The pot is covered. Bring to a bubbling boil and simmer for 2 hours over low heat. Turn off the heat and stir in torn basil leaves. Serve over rigatoni or pappardelle. Polenta is another good side dish. For a large gathering, I suggest baking tomatoes filled with cheese to serve alongside the pasta.
Why this recipe works
- San Marzano tomatoes offer a sweeter, less acidic alternative for the sauce.
- Big pieces of sausage stay in the tomato sauce.
- Tomato paste is added to turn the Dutch oven brick-colored before wine is added to deepen the color further.
- Dried oregano is mixed into the sauce. Fresh basil is mixed into the sauce after the sauce has been taken off the heat.
- One parmesan cheese rind is added to the soup for flavor and then taken out before serving.
Ingredients
- •2 tbsp extra virgin olive oil (30ml)
- •1 medium yellow onion (150g, diced)
- •4 cloves garlic (20g, minced)
- •1 lb Italian sausage links (450g, mild or spicy, cut into large chunks)
- •2 tbsp tomato paste (30g)
- •½ cup dry red wine (120ml)
- •1 can crushed San Marzano tomatoes (28 oz, 800g)
- •1 piece Parmigiano-Reggiano rind (about 2 inches, 5cm, whole)
- •1 tbsp dried oregano (5g)
- •¼ cup fresh basil leaves (10g, torn)
- •1 tsp sea salt (5g, plus more to taste)
- •½ tsp black pepper (2g, plus more to taste)
Instructions
- 1
Heat the extra virgin olive oil in a heavy cast iron Dutch oven over medium-high heat.
- 2
Add the Italian sausage chunks in a single layer and sear undisturbed for 4-5 minutes, until a deep golden-brown crust forms.
- 3
Flip the sausage chunks and sear for an additional 3 minutes.
- 4
Remove the browned sausage with a slotted spoon and set it aside.
- 5
Lower the heat to medium, add the diced yellow onion to the drippings, and sauté for 5 minutes until translucent and fragrant.
- 6
Stir in the minced garlic, dried oregano, and tomato paste, then cook for 2-3 minutes until the paste turns brick ruby-red.
- 7
Pour in the dry red wine and use a wooden spoon to scrape the browned bits from the bottom of the Dutch oven.
- 8
Let the wine reduce by half.
- 9
Pour the crushed San Marzano tomatoes into the pot.
- 10
Return the browned sausage chunks to the tomato base.
- 11
Season with the sea salt and black pepper.
- 12
Tuck the Parmigiano-Reggiano rind into the side of the sauce.
- 13
Bring the pot to a bubbling boil, immediately reduce the heat to the lowest setting, cover, and simmer gently for 2 hours, stirring occasionally.
- 14
Remove the lid and discard the partially melted parmesan rind.
- 15
Turn off the heat and scatter the torn fresh basil leaves over the sauce.
- 16
Serve the gravy warm.
